The lack of potatoes has caused famines because they are cheap yet filling therefore a great food for the poor. But add the right ingredients and they can be a delectable dish for everyone including the middle class and wealthy. They can be mashed, baked, roasted, fried, boiled or whipped. They can be added to soups, served on the side or eaten as a main dish.

Potatoes are available year-round as they are harvested somewhere every month of the year. They are economical in the grocery store and they are easy to grow on your own in a potato box for the homesteader, prepper or weekend gardener, which make them great low cost way to feed a large family on a budget.

With that in mind, I have started this series of recipe books featuring the potato. This is Volume One. I hope that you enjoy!
